Breakfast Bars : page 94

These are great homemade granola bars. They're healthy, sweet enough for kids but not too sweet, and not covered in corn syrup like commercial ones often are but held together by sweetened condensed milk.

We usually make them exactly as laid out in the recipe; any time I've added more nuts or seeds they've been a bit crumblier. However, they do have some consistency problems. They stick to the lasagna pan we use, and are difficult to get out in one piece. They also have a tendency to fall apart.

But still, they're great. The bits left over are fantastic on cereal or with yogurt, and both my kids love them.

Pear and Ginger Muffins : page 97

Very nice muffins indeed. We have a surplus of pears at the moment and were hunting for pear recipes. These don't use tons of pears, just 1 1/2 cups, but it's enough to keep them moist and flavourful.

The consistency is light and fluffy (we substituted some plain yogurt for the 2/3 cup sour cream), almost more like cupcakes than most muffins I've made. They're fairly sweet too, and the ginger taste isn't terribly strong. Next time I'll try these with a little bit less sugar (maybe 1/2 cup rather than 3/4 cup granulated sugar) and a bit more ginger.

Still, very tasty!
