Pork Tenderloin with Roasted Potatoes from Great Food Fast: Dietitians of Canada

Chicken in Wine

We love this recipe and it is now a tried and true one. I always use only chicken breasts and just one layer in a baking dish. Even with my largest baking dish lined with chicken I have not doubled amount of sauce and it seems to be enough. I have prepared this dish ahead and then all that's left is to put it in the oven along with Rice Pilaf (Page 92 Enjoy from Best of Bridge), which is approx. same cooking time.

Novel Nuts

Although I really want to stop making this recipe for Christmas because I've done it for so many years, everyone rebels and says "You have to make these again we love them". I have been giving these nuts as gifts to teachers, neighbours, service providers, etc. forever and they all just love them. I shop early in the season for novel containers, buy the pecans at Costco and voila....many little hostess gifts or a little something for someone I've missed! It's a tradition!

Barley and Mushroom Pilaf

This recipe has become a regular at our house. When I'm rushed, I just add about 1 Tablespoon of olive oil to barley and broth, microwave for 3 minutes and put in oven. Beef broth is equally as tasty. Cooking time is fairly lengthy so can be made earlier in day or day ahead and reheated.
