Chocolate Croissants from King Arthur Flour Whole Grain Baking: Delicious Recipes Using Nutritious Whole Grains

I had wanted to make these for a long time (the picture of them is what made me buy the book in the first place), but never got around to taking the time to prepare the puff pastry (p. 515). But finally... read more >

Joy of Cooking: 75th Anniversary Edition - 2006

By Irma S. Rombauer, Marion Rombauer Becker, Ethan Becker
Scribner - 2006

If you love goat cheese like my wife and I do, there's a good chance you'll really like this recipe. The tomatoes make it much less overwhelming than a quiche lorraine (which is far too overwhelming for me with all the bacon and cheese).

The only time consuming part of the recipe is making the pie dough (I usually use the recipe for basic pie dough on pg. 665). The rest of the recipe is pretty quick and easy. One word of caution though: don't forget to core the tomatoes! If you leave the cores in, you'll end up with an extremely soggy mess.

Classic Indian Cooking

By Julie Sahni
William Morrow Cookbooks - 1980

This is a great recipe, and has become one of the dishes that I try to always have on hand in the freezer (it freezes great!).

Like a lot of the recipes in the book, it can be a bit time consuming to make, especially if you have to put the mughal garam masala together at the same time. But if you already have it on hand (i.e., if you get it together the day before), it doesn't take too much active time to make.

I'd highly recommend eating this with naan... very very tasty.

Injera

One of my main reasons for buying this cookbook was seeing the recipe for injera, which I had never thought of making myself. And am I happy that I did!

The recipe is very quick and simple, and the end result is injera similar to what you'd get at an Ethiopian restaurant. I paired it with the Chicken Stew (p. 245) and the two went great with each other (the injera soaked up the sauce).

I highly recommend giving this a try!

Classic Ceviche

This is an absolutely delicious dish, and pretty easy to make. It takes some time as the fish needs to "cook" in the lime juice, but aside from that you just have to throw a bunch of the ingredients together. At the end of the day, you have a very good (and quite special) appetizer.

I'd highly recommend making fresh tortilla chips (pg. 136) to go along with this. I had never made them myself before, but they really make the dish jump out even more.

Chocolate Croissants

I had wanted to make these for a long time (the picture of them is what made me buy the book in the first place), but never got around to taking the time to prepare the puff pastry (p. 515). But finally I overcame my laziness, and can say that the preparation time is well worth it. These croissants look and taste as good as (if not better) than the ones you find at the bakery.

One suggestion I would make is to omit the chocolate glaze at the end - it really makes them extremely heavy (this is subjective of course).

I made the full recipe for the dough, using 1/4 of it right away and freezing the rest. The dough works well out of the freezer for the first few weeks, but by the third week the dough doesn't puff up as much (leading to good, but not great croissants).

Blueberry Buckle

This is one of my all-time favorite recipes, and a very nice thing to have warm with a cup of coffee on a Sunday morning. It's pretty fast and easy to make and is extremely delicious (the streusel topping is incredible).
