The ricotta added a delightful texture, and made something really special out of a simple dish. I added some sauteed spinach, which was tasty and looked really nice, as well. Also, I was doubling the recipe for a party, so assembled it in a baking dish and cooked it in the oven, which only took a few more minutes and worked out just fine.

Super easy and tasty. More 'complicated' versions aren't that much more work, though, and I enjoy them more. Also, maybe it had to do with the tomatoes I used, but my sauce came out more orange than red.

Absolutely delicious. A simple but impressive-looking and -tasting crowd-pleaser. Studio apartment owners beware: if you haven't ever used real vanilla bean before, you may be surprised to find, as I did, that the fragrance is a little too strong for a small space. Opening a window is highly suggested, as is doing your prep work well before any guests arrive.

Tasted a little bit like a lemon bar- bright and sweet and tangy. I was a little nervous about it being to tart or too bitter, based on the blog entry. In fact, it was very, VERY sweet. Might have been due to the fact that I let my lemons marinate in the sugar for more like 36 hours.

The blogpost's description is absolutely accurate: this recipe is super easy and fast to make (especially with a mandoline), and the result is something that is 100 times more spectacular than the work you put into it. It looks and tastes fancy, and manages to be both light and incredibly satisfying at the same time.
