The Essential Vegetarian Cookbook
By Whitecap Books
Whitecap Books - 1998
Great recipe - easy to make. Can be used in many situations: as a snack, for picnics, bento stash, 'bring a dish' buffet and mezze. Recipe makes a big batch but the nuts keep well for a long time.
Recipe can be found on Graasland blog.

Have used this recipe to make a sugar-free vegan dashi broth. Tastes good.

Surprisingly good side dish that is very easy to make.
Prepare the lemon wheels in advance! Because they'll be eaten as a whole it is advised to use organic lemons.

Absolutely delicious, easy to make. Of course you'll need to use fresh beans. The dressing is awesome and can be used on other veggies as well.

Excellent dressing that can be used on green beans, spinach and other vegetables. You do not need to make your own vegetable dashi; use store-bought instead but make sure it's vegetarian (no bonito among ingredients).

This recipe instantly became an all-time favourite. Like other recipes in this book you need quite a few ingredients, but it's worth it!
Although you could use store-bought green curry paste I recommend making it fresh according to the recipe (it's not really that much work); make a bigger batch and put it in your freezer!
I'm quite strict about the spices & herbs but substitute vegetables to taste. Always using eggplant though. Adding cashews is great too.

I was a bit apprehensive when I started making this salad but it is great! Have made it several times since.
I use ordinary fried tofu (cooled down). Be sure to have fresh bean sprouts (of course home grown is best :).
