About me: I have always liked to cook, particularly breads, fruits, vegetables, vegetarian, poultry and lamb dishes. After marriage we cooked together progressively more difficult dishes with him doing the meat, grilling and frying, and I did the "dough" and the same type of things I had before. After children we started cooking more simply. After discovering the cause of my frequent migraines was an evolving long list of chemicals and odd ingredients, I began getting back to cooking from basic ingredients, and found I could be well again. I also try to cooking from what I can get in season at the ever present fruit and vegetable stands.

The ruby chard was very pretty and tasty in this recipe. Even the eggs turned a slightly red color which you might not be able to tell by my photo. I substituted purple scallions for the red onion and wow, their sweetness was a lovely surprise. Like Queezle sister, I loved the goat cheese in here. I kept all ingredients the same except for the eggs which I cut in half which made it perfect for two.

Giant Mushroom Popover : page 128

The deep mushroom and eggs flavors were wonderful; this dish will be repeated. However, it did not produce a beautiful looking popover. Perhaps with different mushrooms (I used baby Bellas and Shitakes) or the mushroom cut differently, or the popover cooked longer, it will look more appetizing. July 2018. Used white mushrooms and canned enokis, really delicious mushroom flavor, but once again the volume of popover was too small, I think doubling the eggs, milk and flour might help; I will try that next time.

Peanut Butter Fudge Brownies : page 204

As described, the peanut butter flavor was subtle. I used chunky peanut butter, so did not add additional chopped peanuts. The chocolate flavor was almost too intense with both 1 cup of cocoa and 1 ΒΌ cup of chocolate chips. They do satisfy that chocolate craving! The brownies turned out more cakey than fudgy, but that may have been because I used Dutch processed cocoa. The next time I will use regular cocoa. The cooking time stated was too short; they were raw in the middle. I kept adding on 3 minutes, 5 minutes, then became distracted and overcooked them a little.

This simple recipe was a delightful surprise. It is roasted onions and asparagus mixed with boiled rigatoni noodles, seasoned with vinegar and topped with bread crumbs and parmesan cheese. I also roasted the vegetables for longer, waiting for the Rigatoni to cook. It would be best to really get that water boiling right away. The type of bread crumb was not specified, but Panko bread crumbs worked fine. This is not very filling, but as I saw my teenager in front of the TV, finishing off the rest right out of the pan, I do not think he went to bed hungry. It made up quickly and was great for a simple dinner.
