I love this recipe. It is quick, healthy, and delicious! It is savory and a little bit spicy. The veg turns out bright green and retains a satisfying crunch. You could use the ingredients and technique to cook other veggies - especially cruciferous ones - as well.

I'm not much of a fennel lover, but this salad tastes so fresh and the orange really complements the fennel. Would be good in winter to bring thoughts of spring to mind or in summer alongside a grilled steak or chicken breast.

Easy to make and turns out nicely seasoned. A good, warming soup for a cold day.
