Golden Spice Rice with Chickpeas : page 142

It was very good, and even my husband liked it thought he was dubious at first due to the "stuff" in it. It made the whole house smell amazing while it was cooking.

My grocery store didn't have currant so I substituted dried cranberries.

Next time I will substitute vegetable broth for 1/2 the water. I like the flavour it gives to rice. I will also saute 1/2 an onion, finely chopped, along with the rice.

All in all, a good recipe and I will defintely make it again.

Served with golden spice rice (page 142 of this cookbook), minus the chickpeas, peas and currants. It was a good side for this chicken.

Maple Butter Nut Granola : page 82

I make this 2-3 times a month. It is fast and easy to make and my kids love it.

Really good with just milk, or mixed in greek yogourt.

It doesn't clump like store bought granolas and I can't figure out how to get it to do that. I tried stirring less and it just ended up sticking to the pan. But that doesn't matter to me, it's delicious and healthy.
