Light, Fluffy and Rich Pancakes from The New York Times

I love these! They are fluffy and thick, definitely rich, and some how a little custard-y without feeling undercooked. I used cottage cheese and Greek yogurt which I processed, along with the egg yolks,... read more >

Frito Lay Bean Dip

Made this for a Nostalgic Texas BBQ and it was delicious. Brought back memories of when I could eat this stuff out of a can and not feel conflicted! I used 2 small cloves garlic and Amy's lower sodium refried beans.

Grandma's Sourdough Biscuits

Basic sourdough biscuit. Great way to use up your "discard" starter. My dough was a bit sticky (maybe my starter is a little wetter than most??), so I gently kneaded a bit more in.
Update from 3 to 4 stars: Made again 7/30 and they came out much better! Easier to handle and improved oven lift. Not sure if my starter has improved or if I did something wrong the first time around. Regardless, I'm so glad I gave this another try!

Jamaican Jerk Dry Rub

This was very good if you know what you're in for - as warned in the head note, it is HOT! I enjoy spicy food, but I did need to tone this done a bit. I balanced out the heat with the addition of more brown sugar, ground anise, extra dried thyme and an extra dose of cinnamon. I left out the cayenne as my 5 dried habaneros (which equalled the recommended amount) provided plenty of heat. Next time I will only use 2-3 peppers. I made a half recipe which was just enough and lent perfect heat for the Caribbean Grilled Pork Tenderloin with Pineapple Salsa which I have also reviewed.

As many of the reviews on the site state, this is not as sweet as King's Hawaiian which is probably why I decided to try it. I was looking for a "canvas" for my smoked brisket and BBQ sauce. Made delicious sandwiches of the brisket, sauce, pickles and this slightly sweet bread. The bread is a bit fragile with a very tender crumb and moist interior. I made 3/4 of the recipe - 1 pullman loaf and 6 large buns. Flavor is lightly sweet with a hint of pineapple.

These were easy to throw together and came out nice and crispy in spite of me having a little trouble getting the breading to stick. Served with piri-piri sauce but would also be great with a marinara.

Lebanese Potato Salad

This was very good, especially after adding a handful of parsley and some garlic.

Wanting to try out the Swerve sweetener I had recently purchased I picked this simple recipe. Came together quickly and tasted very good. I did decrease the salt by half, otherwise the spices were just right.

Nana's Banana Bread

This is a very good banana bread and easy to throw together. That said, I am not sure that I prefer it to the banana bread I usually make (Flour Bakery Recipe). Good banana flavor and not too sweet, but not as moist as other recipes I have made.

Scalloped Potatoes

This was rich and delicious. Super simple to make and comes together quickly. I added some smoked paprika and a dash of garlic salt.

This is incredible! Great flavors, super moist and so simple! I marinated for about 6-7 hours before grilling. After coming off the grill I wrap the chicken in foil for about 6 minutes to steam, which makes it extra moist. Served with toum, fattoush, hummus and stuffed grape leaves.
12/7/16 Made these again using the broiler and they were almost as good as off the grill. Cooked about 22 minutes turning at 12 minute mark.

Simple Oven Roasted Corn

This is more of a method of cooking than a recipe- that said it is an easy, delicious way to prepare corn.

Southern Buttermilk Biscuits

These were light and fluffy, rose well and had good flavor. I used Self Rising Lily White Flour and omitted the baking powder. Brushed tops with butter. Will definitely make these again.

Thai Sweet Chili Sauce

I have never had Thai Sweet Chili Sauce so I am not sure how this compares but I thought it was very good. I subbed some of the sugar with honey and added minced ginger.
