Great texture and flavor make this a wonderful banana bread. It has great banana flavor, rises nicely, very moist and has a proper crumb (isn't gummy or fall apart messy). I added walnuts and as always was a little generous with the spice. Mine took about 1 hour 20 minutes in the oven.

This is delicious - crisp, clumpy and sweet! I did decrease the sweetener by a couple tablespoons because I used honey which always packs a sweeter punch than maple or agave. Wasn't sure if this would hold together (clump) like I like but it did - the banana/honey seemed pretty sticky from the get go. I used a little "baking spice" along with the cinnamon called for which I thought brought a nice banana bread-y flavor to the granola. I would have tried an extra banana even, but was afraid it might take forever to dry out/cook in the oven. Lowered the oven temp to 300 and mine was ready in about 30-35 minutes. I think my oven would have burned the granola "edges" at 350. Came out perfect!

This is indeed simple and delicious! Due to current diet restrictions I had to use a sugar free maple syrup (but did include the 2 T coconut sugar) and extra cinnamon. Seemed very wet but managed to dry out in the oven. I omitted the fruit this time, and it was not very sweet which was fine with me.
