This is a light and crispy granola. The binder and flavor in this recipe is from a "fruit mash" made with apple, lemon zest and juice, and dried blueberries. I was looking forward to a bit more of a lemon flavor and I think next time I would use more lemon juice rather than extract. This will clump if it's not stirred during cooking ( I rotate pan to avoid any hot spots).
