Dining In: Highly Cookable Recipes

This is a decadent, buttery shortbread that just happens to have chocolate. Really loved these! Reading the troubles others had (on Bon Appetit website) I made sure to beat my butter and sugar until light and fluffy (about 5 minutes). My dough was not at all crumbly and in fact took a bit longer than 2 hours to firm up. My sliced cookies never look very round but when they are this good it really doesn't matter.

This is a simple, delicious weeknight meal - only required one pan, comes together quickly and taste great. I did not have Castelvetrano olives (mine were green but a little bland) so I did miss a little of the punch but I will seek them out next time. Also used shallots instead of red onion, cooking them in the sauce for a minute or two.

Sweet, spicy, cool and refreshing! This is a terrific summer salad.
