These were very easy to throw together and had a nice nutty flavor. Maybe my crackers were rolled a bit thinner since I did not let them cool completely in the oven (they would have burned). Took them out while warm (after 10-12 minutes in the off oven) and let them cool on the pan then on the rack. Crisp, light and a very welcome snack when you are watching your gluten or carbs.
I did sub the pumpkin seeds for bottom of the bag/broken up pecans and cashews as well as using olive oil for half the fat.
