This is a simple, tasty cookie that comes together easily and can be a base for other add-ins. Instead of chocolate chips I have used nuts, cereal and/or dried fruit.
In my oven these took 11 minutes - do not over bake if you seek a chewier center.

These were easy to put together and came out pretty good. My only complaint is that the sauce was way too thin with the 3 cups water! I had to cook it down for about 30 minutes before it was a proper consistency.

I have made this several times and it always satisfies. I have switched up the peppers, but sticking close to the recipe is best. Sometimes topped with Fritos, sometimes with plain old tortilla chips, this is always an easy, comforting meal. I also top with avocado, chopped up roasted peppers, sour cream, chips and cheese.

Made this for a "Texan" themed dinner and it was enjoyed by all. I doubled the recipe but should have known better, because as with many of Lisa's recipes it made more than she suggests - so we had A LOT of creamed corn. This is creamy and delicious without being mush - you only process/blend a bit of the corn, leaving the rest whole kernel. It was not too spicy even with extra jalapeño, though you could amp it up a with a little more cayenne (and I did). I used frozen corn and it came out great.

These are tasty! Doesn't quite fulfill my RS BEANS craving but I will be making them again. I actually think RS beans have a less concentrated flavor than these - but certainly some of the same flavors are there - paprika, cumin, vinegar, chili powder, garlic.
