Lebanese Potato Salad

I really like this salad. Most recently I added garlic and used a little red onion instead of scallions and thought it was delicious!

This is hearty, nutty loaf is delicious and nutritions. I will say the crumb of mine was a little dense and next time I will add a few minutes onto the bake time (I took it out at approx. 65 minutes). I let mine sit in the fridge about 7 hours before the first (overnight) rise, about 14 hours. I thought the flavors were great and loved the crunchy topping to which I added a half teaspoon fennel seed and some black sesame seeds (I was short on white). I also took another reviewers advice and softened my honey in 1/4 cup warm water before mixing with the remainder of the (cold) water. Also ground the first two tablespoons flax with the rice (kept 1 T. whole for topping).
