Weeknight Chicken Cacciatore

Delicious! I used regular mushrooms as portobellos were spendy for a weeknight meal. I used 6 boneless/skinless chicken breasts, 1 1/2 pounds of button mushrooms and kept all the other ingredients the same. The sauce was excellent, although a bit watery for my liking the first day. The next day, however, is when it not only tasted even better, but the sauce was thicker. I made it with their Easy Baked Polenta which was a good pair. If you cut up the chicken smaller, you could serve this sauce over a thicker pasta: rigatoni, penne. Truly excellent chicken cacciatore!

Easy Baked Polenta

This was good, could have been excellent had I not used the convection setting in my oven which resulted in overdone polenta. If you do use convection (or if you know that your oven runs hot), check for doneness at around 35-40 minutes. One hour is WAY too long and the polenta was dried out and lumpy but a whisk and some elbow grease helped smooth it out as did the butter and parmesan cheese. Good recipe, and the best part: very easy.
