I liked the flavour of this - it went well with a plain roast chicken - but wasn't too sure about the texture as grating the carrots and courgettes made for a rather mushy result. I tried it again, this time slicing thin ribbons with a potato peeler, and preferred this second version. Courgette seeds need to be removed before either slicing or grating.
