This is a standard recipe and well explained. If you follow her exact instructions, you'll get a good pie crust. Isn't that what you want? I make the recipe quadrupled and then I freeze the extra for future pies. I've never had a problem.

Sun-Dried Strawberry Hand Pies : page 52
These are easy to make and I like that she encourages you to use jam and dried strawberries, meaning you might have the ingredients to make the recipe without having to go to the store on a special trip. The crusts are great though prone to leaking (it could be because we live in a tropical environment and the humidity causes all pastry products to deteriorate rapidly) but I got no complaints. They package beautifully as well being so compact. They are very portable and tasty ...
