The Encyclopedia of Cajun & Creole Cuisine
By John D. Folse
Chef John Folse & Company Publishing - 2004
This is an absolute must have for any home cook, especially the Cajun home cook. A complete compendium of Cajun and Creole favorites and traditionals. Everything that I have made tastes just like my grandmother's and comes out wonderfully.
Mighty Spice Cookbook: Fast, Fresh and Vibrant Dishes Using No More Than 5 Spices for Each Recipe
By John Gregory-Smith
Duncan Baird - 2011
I love this cookbook. The first weekend, I made three recipes and all came out fantastic. The instruction is easy and the dishes, while they may seem a bit complex at times, are surprisingly simple to put together and taste fantastic. Each recipe is supposed to use 5 spices or less, which makes it easy for folks experimenting with something new -- you don't have to go crazy buying ingredients you may not have on hand. I especially love the suggested menu pairings in the book. Makes it easy to put together an exotic dinner of complementing dishes.
Sam the Cooking Guy: Just a Bunch of Recipes
By Sam Zien
Wiley - 2008
I love this cookbook for easy, tasty, quick meals and sides. Sam's got a great style and gives easy-to-follow instructions every time.
