Gemelli ai Fagiolini : page 115

To me, this was surprisingly good. Two thirds of the green beans (haricots verts here) are cooked then puréed with cream, cinnamon, and a bit of garlic. This is tossed with gemelli (I used casareccia which is more easily available) along with the remaining beans cut in short lengths (similar to the pasta) and topped with toasted walnuts. Could be a starter, but we enjoyed it as a main.

Gramigne con Verza e Salsiccia--Cabbage and Sausage : page 135

Serves 4 as starter, 2 as main.

Never heard of gramigne, but found exactly the right thing labelled "short spagetti" at the grocery. Short bits of thick spaghetti, curled in a sort of C-shape.

Easy to make sauce, but takes a bit of time to cook the cabbage. Near the end, the sauce looked like it was separating, with tiny white clumps, but this wasn't noticeable at serving time.

Satisfying eating.

Maccheroni alla Chitarra con Tartufo dei Poveri : page 158

An interesting sauce wherein the ingredients (mushrooms, olives, anchovies, and chili flakes) are ground together in the food processor. The whole mass is fried in olive oil while the pasta cooks.

- Having no chitarra to cut the pasta, I made some regular tagliatelle, using Whole Wheat Pasta since I thought the earthy taste would go will with the shrooms. It did, but I think narrower pasta, fettucine maybe, would have been better.
- The sauce is fried in 4tbl of olive oil. I think a smidge less might be fine.

- 3+, Ed said, maybe not quite a 4.
