Pasta e Fagioli from Essentials of Classic Italian Cooking

An easy and delicious soup. I used lardons for the meat. We were thinking that chicken sausages would be good, saucisse de volaille or merguez de volaille, cut in quarters lenghtwise, then into little... read more >

This was seriously good. I made a halifsh recipe, served over orzo.

I used 300g of frozen, cooked shrimp (tailed unpeeled). I didn't transfer the tomato mixture to an earthenware dish, but baked right in the skillet, laying the frozen shrimpers on the veg mixture. Baked 12min.

Really a favorite.

Oh yes, definitely a keeper.

I had 380g of merlan (whiting?), and made about an 80% recipe. Make 7 patties altogether, maybe slightly larger than asked. Two of us ate five of these, only because we wanted to keep two for tomorrow's lunch. This makes me doubt the suggestion that the whole recipe serve 6-8. I just noticed that I forgot to flour the patties before frying. Oh well.

Used a seeded cayenne chili and a healthy dose of cayenne powder. Might not bother with seeding next time.

This was really a hit. If you have anchovy haters in the house, keep them out of the kitchen and turn on the exhaust fan--they will not know they're there, only that it is delicious.

Hunan Beef with Cumin

Really tasty. Two of us ate all of it, with a side of Steamed Eggplant.

Didn't really measure the oil, but think I used a bit less than asked. The beef slices need to be submerged in the hot oil, so use your judgment.

Given the range of 2-4 teaspoons of dried chili flake.I used 3 teaspoons. This was nicely hot, but not too much.

Definitely a do-me-again recipe.

Not your ordinary pizza, but very satisfying.
- No cans of cannellini beans in-house (inventory fail :-( ), so I used borlotti instead. Still good. The bean purée was a bit salty when I tasted it alone, but on the pizza it was fine.
- I used a winter squash (trying to use up prolific winter squashes in the potager) that I think is kabocha, but can't see it looks like those pictures. Could have used a bit more of the squash, maybe 3 cups of cubes. That said, the 2 cups fit perfectly in the toaster oven.
