Easy to make and quite yummy. I used the optional rum.

Once you've done something with filo/phyllo, you realize it's really pretty easy to turn out something that looks like it took a lot more effort than it really did.

There are a couple of variations here. The cheesy one with cherries sounds like it needs to be tried. One with leftover pound cake sounds weird.

Broccoli Purée : page 389

This may be the first time I've made a vegetable purée that didn't involve potatoes. Along with thorough instructions, Bittman includes a chart that includes variations for 14 vegetables. I had a broccoli needing to be used, so this was it.

It was easy enough to make. I used a food mill, but think the blender method would be easier, and less clean-up. We both thought it was OK, but would prefer steamed or boiled broccoli.

Chile Bisque : page 131

Seemed like a good idea, but it was almost inedibly bitter. Feeling bad because I used most of my stash of anchos on this. (The after-dinner aftertaste was good, though.)

Will tart up the leftovers with beans and corn hoping to improve flavor.

Good stuff. Easy and quick to put together.
I made a halfish recipe and served over basmati rice.
Used pepper flakes, feeling too lazy to chop up a chile.
Store-bought chile powder (but a special mix from a specialty shop).
Except for the eggplant all ingredients I generally have in house.

Indian Cauliflower Soup : page 130

This is a variation on Creamy Cauliflower (or Broccoli) Soup. I've made the base recipe as Creamy Broccoli Soup. We definitely prefer the Indian Cauliflower variation. Easy to make. Handy to have in the freezer for those nights when you don't feel like cooking. Heat up, stir in yogurt, and enjoy.

One-Hour Vegetable Stock : page 101

A very good veg stock without too much work; more flavor than many. Cut up some veggies, sauté for a while, add water and simmer, that's all. Mushrooms are the secret ingredient.
