Pasta e Fagioli from Essentials of Classic Italian Cooking

An easy and delicious soup. I used lardons for the meat. We were thinking that chicken sausages would be good, saucisse de volaille or merguez de volaille, cut in quarters lenghtwise, then into little... read more >

Madhur Jaffrey's Cookbook : Food for Family and Friends

By Madhur Jaffrey
Pavilion/Michael Joseph - 1987

Tasty. Salmon is sprinkled with lemon juice, pepper, cayenne, and ground cumin before grilling.

The sauce is very tasty, although the recipe makes an enormous quantity, based on 4 cups of yogurt for 6 servings. I used about 1 cup and though I thought we both heavily sauce the fish and veg at the table, there's still half of it left. We're not heavy saucers, but still ...

Potatoes Baked with Garlic : page 106

These potatoes go with anything, not necessarily Indian.
Easy to make, very tasty.

According to the recipe, the same pot/casserole that's used to brown the onion and garlic holds the potatoes and goes into the oven. Lacking a casserole that could sit on the flame and go into the oven, I used a cast iron skillet. Which was fine, except that the bottom potatoes turned a bit black when the skillet had to spend a day in the fridge. Although it means another pot to wash, the next time I'll to do the onions in a skillet, then bake the potatoes in a casserole that can go to table.

Rice and Potato Casserole : page 128

Pretty good, might try this again soon.

Recipe says it serves 6-8. I made 1/9 or 1/6 (can't remember if I used a third or half cup to measure the rice) and we had a super-abundancy of this for two.

The Best Roast Pork, Ecuador-Style : page 127

Really tasty, tender portk; really easy to make.
I buzzed the marinade/sauce with my staff mixer, rather than finely chopping onion and garlic.
