Herbed Wide Noodles : page 121

Easy way to dress up noodles as a side.
- Chop up a pile of herbs: lots of parsley, some basil, chives, and maybe something else to match your main dish.
- Toss the drained noodles with equal amounts of butter and extra virgin olive oil.
- Toss again with come salt and the herbs.

Half recipe with four thighs.
Used all the spices, all the onion/garlic/ginger, 1/4cup lime juice with only 1tbl sucre de canne, half the chicken broth and apricots.
Easy and pretty darn good.

Sicilian Swordfish Stew : page 85

This would be a 5 if the recipe had been written a bit better.

I had 385g swordfish, less that half of what was required. I used that to make more or less a whole recipe, which was a lovely meal for two, wanting only a bit of bread for soppy to complete the meal.

The liquid asked in the recipe is a problem. It calls for 1/4 cup wine added to a hot, 10-12" skillet; I think this would boil off almost completely. I was sloppy measuring out the wine and had a bit more, maybe a half cup, I didn't really look. And I added what was probably about 1/2cup (maybe a bit more) of fish stock I had in the freezer. Then swordfish strips, 2 medium seeded tomatoes, olive and capers are added, the whole simmered for 8min, till the toms break down.

Should halve the amount of pine nuts. They were a nice touch, but 1/4cup was a bit too much for two.

The result was delicious. Definitely a do-me-again recipe.

Thai Fish and Corn Curry : page 86

Thai? Well, maybe.

Quite good, but maybe a bit more green curry paste would be nice, even maybe 1 tablespoon (instead of 1 teaspoon).

I had about 3/4 of the fish (I used lieu noir—saithe I think in English) but made a full recipe as dinner for two. It was good, if slightly underspiced.

Tuscan Chicken Stew : page 70

3.5 perhaps.
Ed liked this a lot; I thought it was ordinary. ???
I made a half-ish recipe. The two of us ate all of what should have served three.
