Moosewood Restaurant Low-Fat Favorites: Flavorful Recipes for Healthful Meals
By Moosewood Collective
Clarkson Potter - 1996
Asian Cucumber Condiment : page 367
This is listed as a condiment. I use it as a small salad with Asian-ish meals. Whatever, it's good.

Baked Beets and Shallots : page 314
Good. Could do early in the day to serve it cool.

Baked Fish with Mustard Marinade : page 288
Very good.

Baltic FIsh : page 287
Very good. I've done this with vaious kinds of fins, always good. I usually prepare this in small individual casseroles.

Cilantro Lime Yogurt Dressing : page 345
A nice change for a salad dressing. Buzzing in the blender makes it a bit thin. (Blenders seem to have that effect on yogurt.)

Citrus-Dressed Asparagus : page 313
I did this with whole asparagus, but the pieces (as directed) are probably better, since there's more surface to absorb the yummy dressing.

Couscous with Peas and Onions : page 179
An easy and tasty side dish.

Fish with Herbs and Lime : page 289
Good. Made it without tomatoes (allergy in house); used a bit extra lime juuice for moisture, but this wasn't really necessary.

Fish with Pineapple Chutney : page 292
Good. Salsa very good too.

Fragrant Jasmine Rice : page 189
Very good, but the quantities are strange. A quarter recipe serves two generously.

Garlic Mashed Potatoes : page 328
Good variation on smashed potatoes.

Herbed Fish in a Packet : page 296
The packet idea is always fun. This one is good.

Honey Mustard Fish : page 298
I made a half recipe with 2/3 of the "sauce" and all of the cornmeal. We thought there was way too much honey.

Japanese Sesame Spinach : page 330
I did this with chard rather than spinach. It's a tasty way to get your greens.

Mustard Carrots : page 317
I liked this; Ed didn't.

Quinoa Black Bean Salad : page 141
Good, but two of us ate all of it as a side dish!

Quinoa Pine Nut Pilaf : page 184
We liked this with quinoa. Made it with millet once, but thought that was boring.

Roasted Vegetables Three Ways : page 226
We thought a half recipe was very generous for two; would have served three.
The Caribbean Dressing alternative is very good!

Southeast Asian FIsh Rolls : page 294
This is a household favorite. I use panga filets which are cheap and good.
useful (0)
Spicy Fish Cakes : page 302
This was good enough, but I have a similar recipe that's the same idea, but much better. Mixing fish and shrimp might help this.

Spinach Avocado Grapefruit Salad : page 135
I thought this was an interesting combination. Ed didn't like it. To each his or her own, I guess.

Thai Seafood Yum : page 305
Yum's the word, yes indeed! It was an especially nice summer salad.

Vegetable à la Greque : page 130
Good marinate. A half recipe served 4.

White Bean and Red Pepper Spread : page 125
We thought this was delicious, but it wasn't reall a spread. Easy to make, it might made a good pizza topping. Added a dash of cayenne, which didn't hurt at all.

Zucchini with Cilantro Sauce : page 335
Another household favorite. A half recipe serves three.
