Salmon-Dill Salad with Pasta Shells : page 191

I'm a little be unsure of the proportions as written, but the result was very good. I served as a starter and we had a bit left for a munch the next day.

Any tiny pasta will work; I used some little shells. I used 3oz for two. Had 90g of smoked salmon; I'm sure smoked trout would be fine. The dressing is equal parts mayo and yogurt, with some minced shallot and fresh dill. (Dried dill would probably work if you let it sit around a bit before serving.)

Simple and really tasty.

Light Tomato Sauce : page 73

This is a really quick and easy way to make a simple tomato sauce to use with pasta. It makes about 3 cups, for 1 pound pasta he says, but I think that would be oversauced.

I used 2 cups (probably ~600g) unseasoned tomato purée from the last summer's garden, rather a big can of tomatoes, about 3/4 of what was required. This would easily have sauced 1# of pasta for four.

Still, it's a quick and easy way to make a pretty good tomato sauce.

I zapped mine, because I didn't want all the slices of onion and my tomatoes were already puréed.

Fettuccine with Zucchini : page 81

I'm not sure why zucchini got singled out for the titles, since there are also red bell peppers and tomatoes. Whatever, it was good.
- Fresh pasta (my original intention, but time didn't allow) would be overwhelmed by the veggies, I think.
- I cut my zukes into pieces about 1-1/2" long and cut these bits into julienne-ish strips. Think it would have been prettier to cut them into lengths as long as the bell pepper strips.
- Seemed to need lots of salt at the table, but I didn't really measure that.
- I seeded my tomatoes, but didn't peel them. (Ssh!)

This would be especially good in summer when you're getting the veggies directly from the garden.

Chèvre-Tomato Spaghetti : page 150

A very good pasta sauce. It's based on Beard's Light Tomato Sauce in the same book.

This sauce will easily sauce pasta for six and maybe for eight.

Easy to assemble and very tasty. The variation with blue cheese will go on the to-be-tried list.
