Pasta e Fagioli from Essentials of Classic Italian Cooking

An easy and delicious soup. I used lardons for the meat. We were thinking that chicken sausages would be good, saucisse de volaille or merguez de volaille, cut in quarters lenghtwise, then into little... read more >

Eating Together: Recipes and Recollections

By Lillian Hellman, Peter Feibleman
Little, Brown and Company - 1984

Pasta Pentimento : page 170

Half recipe for our main meal -- an instant favorite. A big hit. This is in Feibleman's part, in a little section titled "Food of a Hospital Patient", foods he would bring Hellman when she was in the hospital.

The recipe calls for vermicelli, which I think is a short little pasta. I served with spaghettini instead.

Simple sauce of minced anchovies*, garlic, sun-dried tomatoes, simmered in olive oil along with pepper flakes and black pepper. The sauce is tossed with the pasta and Parmesan before serving. Yum.

* I am not an anchovy person. Yuck. But this is one of those recipes where the minced fish melts into the sauce. The overly fishy smell/taste disappears leaving a delicious savory taste behind. Surprising and wonderful.

Peach Cobbler : page 59

Very yummy.
- No bourbon in house; I used brandy instead. (Pineau might have been nice.)
- Only 1/4cup sugar for the filling.
- We got six piggy servings from this, but nine might be more moderate.

This was a super hit.
- I made about a third recipe with two veal scallops. Might consider using turkey scallops.
- Would be easy to do this for a group. Make the sauce. Sauté the scallops. When you're ready to serve, reheat the sauce with the scallops in it.
- Unusual, to me anyhow, that the sauce is thickend with ground almonds.
- Might consider using some of my frozen tomato purée rather than peeling/seeding/chopping tomatoes.
