This was a hit. I made a half recipe (a bit short on shrimp, unfortunately) and served it for dinner over brown rice. The rice made a new chew under the crunchy salad.
Really nice tastes come together in a bit of an unexpected fashion.

Ran across this recipe last night and, having 'shrooms wanting to be used up, decided to work it into the schedule right away. I was surprised how well the wild rice went with the chipotle sauce. DH gave it 10 stars.
Definitely a do-again.

- Half recipe for 2 servings (DH wanted more), with 175g frozen (defrosted) cooked shrimp and 1/2 cup uncooked wild rice.
- To the sauce, I added more than a pinch of cayenne, plus a goodly slog of chipotle powder.

Very tasty and easy. The wild rice takes much longer than the rest of the dish to cook. You can start that, prep the rest, then have a good sit until starting the rest about 10min before the rice is due.
