Pasta e Fagioli from Essentials of Classic Italian Cooking

An easy and delicious soup. I used lardons for the meat. We were thinking that chicken sausages would be good, saucisse de volaille or merguez de volaille, cut in quarters lenghtwise, then into little... read more >

Liked this. A nice slaw, pretty, and fairly quick to put together. I've always got broccoli stems to be used and this is a nice way to do it. For two, it took about three stems and one carrot. Precision measurement is not a requirement.

Pretty good stuff. I made a half recipe for two.
- Used linguine since there was not enough fettuccine or tagliatelle in the house and I didn't have time to make any.
- Used all the crushed red pepper flakes.
- Used only about 1tbl of the butter; less would have been ok.
A bit rich with the cream and butter, but nice comfort food.

A very nice tart.

- I used a store-bought pâte feuilleté. Any kind of crust would be fine, whatever you like.
- I mashed together a 200g ball of mozzarella and a 150g container of soft goat cheese.
- I used the last of my oven-dried tomatoes from the freezer and roasted 2 romas that I had on hand.

We'll get two meals for two out of this. Six servings sounds a bit light.

I made all the sauce with half the pasta. The pasta (malfada) was generously sauced, but not excessive. Following some of the comments, I used the zest of a whole lemon and added the juice to the sauce, and I roasted the tips with a minced shallot and garlic cloves. Very tasty.

An interesting way to use up that leftover holiday cranberry sauce. The sauce was also good on the roasted brussels sprouts that accompanied the fish. This might become a post-holiday tradition.

A super salad, a big help to using up that zucchini surplus from the garden. I made this one night for us, then the next night for company.
- The first night I forgot the basil. Not sure I didn't prefer it that way.
- Had a bit of leftovers the second night, which we ate the next night. (Yes, that makes three nights in a row!) The zucchini surprised me by holding up remarkably well; the basil was a bit soggy.
