Pasta e Fagioli from Essentials of Classic Italian Cooking

We liked this, a quick and easy dinner. I made a half recipe, using frozen cooked shrimp (rather than shelling raw ones) and jarred roasted red bell pepper (instead of tomato--a common substitution in a tomato-allergy household).

Both of us thought the burnt brandy taste was surprisingly absent (usually I'm very aware of the burnt taste of flambéed things), even though I was a bit long on the brandy (my measuring helper misunderstood and I didn't want to throw out the brandy).

Nevertheless, it was quite tasty and we'd do this again.l

Pasta with Salmon Caviar

No salmon caviar, but lumpfish caviar (cheaper and died red, I didn't realize till I looked it up).

Half recipe made an easy and fast dinner for two. Very easy and fast to make.

This would make a nice starter, but I think a whole recipe would serve 8, rather than 6 as a starter.

Seriously yummy. Easy to make. Fairly quick. A bit of preparation, then all comes together in a few minutes.

A good light meal.
