Cantaloupe Soup : page 25
This soup was pretty and tasty good up to the point of adding the balsamic vinegar, which muddied the color and the taste. I might try this again and leave that bit out. Also taste as you add the honey to be sure you don't over-sweeten it.
23jul16: Made this again. Was very sparing with balsamic, lemon juice, and honey. Added a bit more balsamic after tasting. (I'm wondering if last time I put in a tablespoon, rather than a teaspoon, of balsamic.
Anyhow the result was very good, it was a very nice starter for a picnic on a hot day. I can see serving it around in wine glasses for a cool treat.
Upping my rating, since we really enjoyed this, and I'll definitely make it again.

Citrus-Marinated Game Hens : page 14
Easy and tasty, a nice picnic recipe. Put the birds on to marinate the night before, grill them in the morning, then pack and go. (I used a split coqulet rather than a game hen.)

Couscous Salad with Roasted Peppers : page 16
Easy and tasty. The ingredients call for the bell peppers to be roasted. I overlooked this, so my bp's were diced uncooked. It was fine. This is quite a nice couscous salad.

Mango Cinnamon Crisp : page 44
I went to make this, thinking I'd defrosted most of a sack of frozen mango slices. Turns out it was something else, but I did have a small number of slices in the freezer. Used those and a cup of blueberries to make a half recipe.
The recipe has an error: there are two ingredients that are not mentioned in the instructions. I sprinkled the lime juice on the fruit, and mixed the sugar with the oatmeal topping. Used half the required sugar and we thought it was perfect.
The mango-blueberry combination was remarkably good. This could be done with any fruit, straight or combination.

I liked this, but I'm thinking for a picnic it might be better to make smaller pieces of the green beans, since the long beans don't lend themselves to serving with a spoon. On the other hand, the long beans look very attractive on the plate, so it might be a good idea to bring some tongs they can be easily laid out in a parallel fashion.

Roasted Eggplant and Pepper Sandwich : page 23
Really good sandwiches that travel well. Add some basil leaves to make it even better.
I use roasted red peppers from a jar.
