Baked Ham & Cheese Bread Pudding : page 149

I've made this three times so far and it's great for a warm, easy lunch that both my toddler and preschooler will eat. I'm sure it will fall into heavy rotation this winter.

It's an extremely adaptable recipe--I've used chicken, turkey, and ham; swiss, edam, and fontina. I wasn't crazy about the edam, but will definitely use swiss again. I suggest cutting up the meat in smaller pieces; it will make slicing up the pudding to serve much easier and neater.
