About me: I collect cookbooks and love to cook and try new recipes. I tested recipes for Leite's Culinaria for almost eight years. I learned to cook from many good southern cooks including my Mom, Dad, several Aunts and my Grandmothers. My children and husband also like to cook and try new foods and recipes. My son still lives with us but our daughter is married. She often visits to cook with me. We are adventuresome eaters willing to try new things.

Bourbon Roasted Pork Loin from Everyday Dorie: The Way I Cook

Cheesy Baked Cheese Enchiladas : page 8

I made these using some of the left over Rosemary and Thyme Roasted Chickens from page 3. I also made the no cook garden vegetable sauce on page 8 for the enchiladas. We all love the sauce which I served as a side on another night to use up the rest of it. The enchiladas were so fresh tasting from the fresh garden sauce. So cheesy too!

No Cook Garden Vegetable Sauce : page 58

This stuff was fantastic on the Enchiladas from page 8 and wonderful on it's own. I plan on making this one often to use in place of salsa.

Rosemary and Thyme Roasted Chickens : page 3

This recipe makes two chickens. We ate most of one for supper and it was delicious. I shredded enough to make the Chicken Enchiladas, also from the book, tomorrow for supper and had enough to make a chicken salad with the rest. I'll definitely be making these again.
