About me: I collect cookbooks and love to cook and try new recipes. I tested recipes for Leite's Culinaria for almost eight years. I learned to cook from many good southern cooks including my Mom, Dad, several Aunts and my Grandmothers. My children and husband also like to cook and try new foods and recipes. My son still lives with us but our daughter is married. She often visits to cook with me. We are adventuresome eaters willing to try new things.

Bourbon Roasted Pork Loin from Everyday Dorie: The Way I Cook

Cheese Enchilada Casserole : page 47

This was an easy to make and quick supper. You have three enchilada sauces to choose from to make this one with and I choose the Tomato Jalapeno one. You can also choose from several things for toppings. I sprinkled green onion and put a dollop of sour cream on each of our servings. Next time I might also put some avocado and additional cheese on top. They suggest Monterey Jack, queso fresco or a combination of cheeses and I think any of those would be good but I used some pepper jack which also was delicious.

Nicoise Salad : page 96

This made a great main course salad. My husband and I both loved it. I made a half recipe. I will definitely be making this one again. Quick and easy supper for a work night.

Pork Fried Rice : page 39

This is in the dinner under $10 section. It says it feeds four but hubby and I ate the whole thing. It was very good. Quick and easy if you have left over rice. Great for a week night meal.

This makes a great quick meal for one or you can do like I did and double it for two. Great for a work night supper since it doesn't require many ingredients or much time. I had everything on hand except the optional pesto which I opted not to use. Instead of transferring the soup to a blender I just used my immersion blender.

Tomato-Jalapeno Enchilada Sauce : page 47

This was very good on the cheese enchilada casserole and I think would be great on nachos or for a dipping sauce for tortilla chips. I was a little skeptical about using 1/4 cup thyme leaves in this and decided to not quiet use a whole 1/4 cup but it was delicious.
