About me: I collect cookbooks and love to cook and try new recipes. I tested recipes for Leite's Culinaria for almost eight years. I learned to cook from many good southern cooks including my Mom, Dad, several Aunts and my Grandmothers. My children and husband also like to cook and try new foods and recipes. My son still lives with us but our daughter is married. She often visits to cook with me. We are adventuresome eaters willing to try new things.

Emeril's Christmas Morning Breakfast Bake : page 39

Son and hubby didn't care for this one. Daughter and I liked the parts that got really crispy. I make a different casserole each year as part of our Christmas breakfast. I made this one for 2011. Not one I'd make again but glad we tried it. We like most of the components (bread, spinach,Canadian bacon, eggs, cheese) but didn't care for it as a whole I suppose. One nice thing is that you can assemble the casserole the night before and pop in the oven in the morning.

Twice-Baked Sweet Potatoes : page 89

These were very good. My daughter and I made a meal out of them by adding a massaged kale salad. Love the creaminess the goat cheese and butter gave to the sweet potato and the crunch the topping of panko and pecans gave to the finished dish as well as the taste of the chives along with the rest of the ingredients. Son who doesn't usually like sweet potatoes unless there's sugar involved said these were pretty good and he'd love the filling in a regular potato.
