About me: I collect cookbooks and love to cook and try new recipes. I tested recipes for Leite's Culinaria for almost eight years. I learned to cook from many good southern cooks including my Mom, Dad, several Aunts and my Grandmothers. My children and husband also like to cook and try new foods and recipes. My son still lives with us but our daughter is married. She often visits to cook with me. We are adventuresome eaters willing to try new things.

While this was quiet good the low fat cheese left a little to be desired texture and melting wise on top of this casserole. If I make this again I think I'll use regular cheddar and just use less. Since there is two cups in the recipe I think half of the regular cheddar would taste better than the whole amount of low fat. We enjoyed the chopped dill pickles on the finished dish.

My daughter and I decided to make these for us and the boys beef sliders, after seeing these on The Chew. They were delicious. We did add some avocado and a pickle to ours when we built our burgers and on one each some Guyere cheese. The burgers are super moist from the grated onion. Clinton's secret ingredient of cumin gave them a wonderful flavor as did the Dijon both in the meat mixture and on the bun. Loved the way they held together with the panko. I couldn't find potato dinner rolls so we just used plain ones. We'll be making these again.

Crazy Street Corn

I watched Patti from Patti's Mexican Table make this one the chew and I knew we had to try it for our Cinco de Mayo meal. It was delicious. I'll be making it again.

Since we couldn't find Robiola we substituted cream cheese as suggested by Mario on the show. He also said you could use other meats besides Moradella and since Hot Capocollo which was on sale. This made a very tasty appetizer. These are quick and easy to put together.

This made an excellent summer supper. I used some locally grown cherry tomatoes - yellow, chocolate and red and pearl mozzarella balls, and basil and parsley from my plants. Along with some garlic, olive oil, fresh cibatta bread crumbs and freshly grated Parm this was delicious.

I wasn't sure I'd like this together but it was quiet good. I only ate a small bacon pancake with the spicy syrup with my baked tomato and poached egg. Hubby, son and great niece just ate the pancakes. Everyone liked the pancakes except hubby who said they were too thick. All three of them ate just plain syrup on theirs.

Michael Symon's Chicken Kiev

We loved this one. Moist and delicious chicken breast from the herb butter. I didn't follow the recipe exactly as I had some leftover herb butter from making Sara Foster's steaks with herb butter earlier in the week. Her and Michael's herb butter were similar but didn't use all the same herbs. Also I only made 4 chicken breasts instead of 6. I would make these again though for the crunchy panko crust and moist flavorful chicken.

I love watching the chew. Since I'm at work when it's on I watch on the ABC website. I've seen so many recipes I want to try but this was my first.

The recipe was on the Guilty Pleasures show which aired on Jan. 31, 2012. Since I didn't have to work today and had all the ingredients except the optional salt and vinegar chips I decided to make it for hubby, son and my breakfast.

I cooked their eggs well done and mine on the runny side. It was good and we all enjoyed this change for breakfast. Son said he would have liked the salt and vinegar chips as well.

Daughter made both of these recipes for us and they were both good. She served the sandwiches on a cibatta bun. Didn't get a photo of the pineapple cooler and the other photo not that great either.
