About me: I collect cookbooks and love to cook and try new recipes. I tested recipes for Leite's Culinaria for almost eight years. I learned to cook from many good southern cooks including my Mom, Dad, several Aunts and my Grandmothers. My children and husband also like to cook and try new foods and recipes. My son still lives with us but our daughter is married. She often visits to cook with me. We are adventuresome eaters willing to try new things.

Melty Monsieur : page 24

Easy, delicious and perfect for a hot summer day since you only have to use the broiler for a few minutes and you're ready to eat. We had these for breakfast but I think they would also make a great lunch or light supper with the addition of some fresh fruit. I used sour dough bread instead of the multi grain since I found out recently I have gout and have to limit my whole grains. Gruyere was about $10 when I went on my shopping trip so I opted for some really good Swiss at $4. I will be making these again.

Open-Faced Pimiento Cheese BLT's : page 60

The pimento cheese in this has a mixture of Reduced fat sharp cheddar and Parmesan which was delicious. I also liked the addition of arugula instead of lettuce on this one. One slice of bacon per sandwich sounded a bit skimpy but it was perfect. I also like that it is served on sourdough bread.
