About me: I collect cookbooks and love to cook and try new recipes. I tested recipes for Leite's Culinaria for almost eight years. I learned to cook from many good southern cooks including my Mom, Dad, several Aunts and my Grandmothers. My children and husband also like to cook and try new foods and recipes. My son still lives with us but our daughter is married. She often visits to cook with me. We are adventuresome eaters willing to try new things.

Fire in My Belly: Real Cooking

By Kevin Gillespie, David Joachim
Andrews McMeel Publishing - 2012

Gussied-Up Mac and Cheese : page 283

I checked out Fire in My Belly by Kevin Gillespie from the library and have marked several recipes to try. Of course I had to try his version of mac and cheese first and it was fantastic. Who'd have thought to top it with crushed potato chips before baking. No flour either only lots of heavy cream, velveeta, smoked cheddar, gouda (I accidently got Swiss so went with that) and Parmesan, along with diced andouille sausage. I couldn't find the pasta shape he called for so I used small shells instead. Even hubby loved this one. We all agreed so creamy and cheesey. Yum!
