About me: I collect cookbooks and love to cook and try new recipes. I tested recipes for Leite's Culinaria for almost eight years. I learned to cook from many good southern cooks including my Mom, Dad, several Aunts and my Grandmothers. My children and husband also like to cook and try new foods and recipes. My son still lives with us but our daughter is married. She often visits to cook with me. We are adventuresome eaters willing to try new things.

Braised Fennel with Saffron and Tomato : page 28

This dish was amazing and delicious! The sauce from it was even good on the Sweet Potato Gnocchi From Earth to Table. I also made the Fennel stock to go in this one. I'm really amazed that my daughter and I both love fennel since neither of us likes anise flavor and can hardly even stand the smell. This was over the top good though.

This is the first recipe I've made from my copy of Vegetable Literacy that I got awhile back with part of my Amazon Gift Card I received from My Points. It's called Comforting Tomatoes in Cream with Bread Crumbs and Smoked Salt. Unfortunately I didn't have smoked salt so I used pink salt instead. The recipe is for one but I made two of them for my son and I since hubby didn't want to try it. It turned out delicious. I toasted both sour dough bread slices to go in the bottom of the bowl and crumbs for the top. The recipe said you could do it either way. Both my son and I loved this one.

Fennel Stock : page 28

This was easy to make and great in the Braised Fennel wedges with saffron and tomato. I gave the leftover stock to my daughter to use in some soup.
