About me: I collect cookbooks and love to cook and try new recipes. I tested recipes for Leite's Culinaria for almost eight years. I learned to cook from many good southern cooks including my Mom, Dad, several Aunts and my Grandmothers. My children and husband also like to cook and try new foods and recipes. My son still lives with us but our daughter is married. She often visits to cook with me. We are adventuresome eaters willing to try new things.

Roasted Mashed Potatoes with Goat Cheese : page 148

Delicious and interesting way to make mashed potatoes. Potatoes are peeled in stripes and quartered both lengthwise and crosswise then mixed with green onion, garlic and olive oil and roasted then added to melted goat cheese and milk and mashed. Just wonderful.

Daughter and I enjoyed this one, hubby said a bit thin but ok. Even though you only use a small amount of the chipotle chile powder this still had a nice spicy kick.

Tomato Tart : page 88

I love trying new tomato pies and tarts in the summer so I knew I'd have to try this one especially after seeing the stunning photo in this book. We really enjoyed it but have tried others we liked better. Still quiet amazing. I used a variety of heirloom tomatoes both big and small and several colors.

This could actually be a main course or a side. My daughter and I loved the addition of plum tomatoes, yellow squash and onions in this one as well as the use of white cheddar popcorn instead of the usually bread crumb topping. Son said he would have liked it better without the tomatoes and squash and hubby though a bit dry.
