I had a couple leeks leftover from a recipe I made a few days ago so I was delighted to find this recipe called for two. I used my home-made chicken stock and new white potatoes instead of Yukon gold. I used my immersion blender to make it smooth. This was a delicious soup that hubby and I both enjoyed.

I loved this simple omelet and it made a nice quick and easy supper. I used some fresh eggs I got from a neighbour and some local yellow cherry tomatoes. I didn't get mine rolled as good as the author I bet, but her instructions were easy. It still tasted delicious.
