About me: I collect cookbooks and love to cook and try new recipes. I tested recipes for Leite's Culinaria for almost eight years. I learned to cook from many good southern cooks including my Mom, Dad, several Aunts and my Grandmothers. My children and husband also like to cook and try new foods and recipes. My son still lives with us but our daughter is married. She often visits to cook with me. We are adventuresome eaters willing to try new things.

This is a Cuban meatloaf and after forming and rolling in cracker meal it's allowed to sit in the fridge for an hour before being simmered on top of the stove in a tangy tomato sauce infused with garlic, bell pepper and onion. The meats that form the loaf are a combination of beef, pork and honey ham. There is also a nice little suprise when you slice and serve it up sliced olives hidden inside. When serving it's sprinkled with canned peas and pimientos. I served with more peas, mashed potatoes and home made rolls. Even hubby loved this meal. Perfect for a cold day.
