Hubby and I enjoyed this one. I choose the option of green beans instead of snow peas since they're easier to find here. My store didn't have a skirt steak but they did have a sirloin steak at a great price so I got that. Fast, easy, quick, delicious, work night supper.

Cornbread Chili Casserole : page 91
While this was very good we didn't really care for the sweet cornbread topping. Next time I'll just make a small batch of my own cornbread instead of using a boxed one.

Hummingbird Pancakes : page 25
Hubby and I loved these. I ate mine with sliced strawberries and bananas and hubby added pancake syrup and the leftover crushed pineapple to his along with the berries and bananas.

Orzo Salad : page 80
Made for my work lunches. Excellent. Loved the chick peas along with the orzo, grape tomatoes, kalamata olives and red wine vinegar and olive oil dressing. Nice touch to cook the orzo in chicken broth.

While this was good it was a bit on the sweet side for son and my tastes.

Spinach-Stuffed Shells : page 148
Included in the stuffing was some Tofu Ricotta, also a recipe in the book. I really enjoyed these but son didn't care that much for them. He said he liked the other spinach stuffed shells I made a long time ago better.

I thought this was very good in the spinach stuffed shells. I'm also going to try it on some toast as Trisha suggests, since the recipe made more than I needed for the shells.
