About me: I collect cookbooks and love to cook and try new recipes. I tested recipes for Leite's Culinaria for almost eight years. I learned to cook from many good southern cooks including my Mom, Dad, several Aunts and my Grandmothers. My children and husband also like to cook and try new foods and recipes. My son still lives with us but our daughter is married. She often visits to cook with me. We are adventuresome eaters willing to try new things.

Pork Tenderloin in Mustard Sauce : page 114

This was so tender and the sauce was amazing. My daughter and I both loved it. Son in law didn't care for the sauce, said too many onions for him. I did cook mine longer that it said since when I checked after the first roasting time it was way to raw in middle. I doubled the first cooking time but followed the authors instructions of not cooking for over 10 min once sliced and topped with the sauce.

Perfect recipe for two or three people. I made it for my daughter and my breakfast recently and it was very filling and delicious. Loved the feta cheese in this dish.
