About me: I collect cookbooks and love to cook and try new recipes. I tested recipes for Leite's Culinaria for almost eight years. I learned to cook from many good southern cooks including my Mom, Dad, several Aunts and my Grandmothers. My children and husband also like to cook and try new foods and recipes. My son still lives with us but our daughter is married. She often visits to cook with me. We are adventuresome eaters willing to try new things.

Bourbon Roasted Pork Loin from Everyday Dorie: The Way I Cook

Asparagus, Goat Cheese & Warm Butter : page 254

This was delicious. So simple. A perfect weeknight side dish.

I used baby bella's in this one for the mushrooms. It was delicious. I used the optional cilantro and had intended to use the optional smoked paprika but forgot. This was still delicious. I made a half recipe for myself. I did have to bake my sweet potato much longer than stated in the recipe. My potato was on the small side but at the 30 min. mark it was not done. I added 10 more minutes but still not done so I popped in microwave for 5 minutes - perfect.

Chicken Piccata : page 216

All the chicken eaters in my family loved the Chicken dish. I used boneless thighs. Loved that this recipe calls for Vermouth. I bought a bottle for another recipe in the book and have almost used the whole bottle since several other recipes in the book also call for it.

Cool Greens with Hot Asian Dressing : page 37

Delicious. Did have to make a few subs. Couldn't find chili peppers in my market they were out so used dried chili flakes. Omitted the herbs and forgot to add sesame seeds at end. I used baby spinach for the green option and radishes for that option since our local markets don't have daikons or mooli.

My daughter and I fell in love with this recipe. I loved the flavors of goat cheese, black pepper, roasted grapes and olive oil on toasted sourdough bread.

Greens with Chili, Olive Oil, Eggs, Feta &Seeds : page 21

Delicious I made a half recipe for my Sunday morning breakfast. I did 2 poached eggs instead of one. I used raw sunflower seeds for the seeds since I keep a bag in my freezer. I also used the herb option of cilantro since I had that on hand as well. I might try fried eggs next time as Henry says they are easier when you are in a hurry. I think either way this would still be great. Love that it's on sourdough bread. Very filling and I didn't get hungry till well past midday.

Hard Cider Rarebit : page 60

Son and I have tried others we enjoyed more than this one but this one was still good. At first we thought too sweet but I added a pinch of salt and that took care of that. We ate ours on sourdough toast. Very good we just prefer another recipe not using hard cider. This recipe didn't photograph too well at least not for me.

The slaw is beautiful and tasty too. Love all the combination of flavors and it goes perfectly with the roasted sausages.

Huevos Rotos : page 16

While this was good I didn't enjoy the eggs made this way. When I dropped them from the shells at the direction of 12 inches above the yolks busted. I like my yolks to stay intact until I prick them with my fork and let them ooze over whatever I'm eating them with. Hubby and son like theirs completely done so I left theirs in the pan longer. I did love the smoked paprika and chili flakes in the fried potatoes with the eggs though. If I made this again I'd do my eggs in a separate pan and serve over the potatoes.

Son, daughter, son in law and I all enjoyed this one. Hubbys not a chicken eater. I was the only one to eat cilantro on mine and son in law only had ketchup and mustard on his. I originally bought ciabatta rolls to use but someone in my cookbook club tried them that way and said they were to bready. I had to make another run to the market and found some take and bake demi baguettes which worked perfectly. We had a half one each. I used low-sodium soy sauce in the marinade and two baby cucumbers, red onion instead of shallot and a seranno for the red chili. Mine was only turning red but still quiet hot.

Leek & Feta Omelet with Sumac : page 22

I made a half recipe for my breakfast one morning and it was delicious. I didn't have the optional sumac. This was delicious. Loved the leeks and feta together in the eggs.

Menemen : page 14

This made for a very good breakfast. Leeks, bell peppers, tomatoes, garlic and some spices. I used tiny sweet colored peppers red and yellow instead of bell. Instead of flatbread I ate mine with sourdough toast. I used a couple of the options and sprinkled on parsley and feta. I cut the recipe down to just serve one.

Delicious, even hubby thought so. I made a half recipe for him and I. I didn't put the cilantro and chopped roasted peanuts on his. He hates cilantro and has a hard time eating nuts. I did add the radishes to the cucumber for the topping. For the hot chili paste I used Gochujang. I used part of a bag of wide egg noodles I had in my cabinet.

Orzo with Lemon & Parsley : page 100

Daughter and I loved this. I used homemade chicken stock and dried parsley since I rarely find Italian parsley in our local markets. The lemon zest gave it a nice brightness and the Parmesan lent a nice creaminess.

Parsi Style Scrambled Eggs : page 23

Made a half recipe for one. I ate with sourdough bread instead of flatbread. I used the optional heavy cream in the scrambled eggs. I had to use chili flakes instead of the called for fresh chili since my store was out of those. I used a little more than the called for 1/2 teaspoon of butter to saute my onions in. Very good, quick and easy workday breakfast.

Pates a la Cevenole : page 109

While this was good but daughter and I thought not good enough to repeat. The boys wouldn't touch it. We like other pastas better. I think I'd prefer less cream and more cheese. The chestnuts and mushrooms did give it a nice flavor. I had chestnuts in my freezer. Chestnuts weren't to bad to peal but I took a hint from online and cut a small x in top of each before adding to boiling water and cooked 3 minutes then let sit in the hot water while I removed a few at a time to cool just enough to handle. If they cooled too much they were harder to peel.

I found out I don't care for dates in my eggs. But I can say I tried before I decided that. I've heard people say they didn't like so and so only to tell you they've never tried it. I always ask then how do you know you don't like it. I'm glad I tried it, now I know I don't like it. Instead of the flatbread I toasted some sourdough bread to go with since I had some on hand anyway. Also was out of cumin seeds so just used a dash of ground cumin.

Pork Chops with Mustard & Capers : page 188

Hubs, son and I all agreed this is one I need to make again. Delicious! Chops are browned then placed in oven to finish cooking. The fat is drained and chops moved to a plate while you make the sauce which consists of Dry Vermouth, Dijon, heavy cream and capers.

Raspberry Yogurt Cake : page 327

While this was very good I did have some problems with the recipe. Had to cook much longer than stated. The batter was super thick and was hard to get in two thick enough layers to put filling between.

Salmon, Fennel & Potatoes en Papillote with Dill Butter : page 129

I took someone else's idea from the Food52 cookbook club on Facebook, to do in aluminum foil since I didn't have parchment paper. Daughter and I loved it but hubby and son didn't care for it at all. Neither of them are big fish fans. I liked that several of the recipes in this book use some of the same ingredients. For instance this is the second recipe using some of the Dry Vermouth I bought. I have a few more marked to use up more of the vermouth.

Hubby and I divided this between 3 slices of sourdough toast and we ate 1 1/2 each. I couldn't find fresh red chilies in my market this week so I used chili flakes. I only put cilantro on mine since hubby has the soap gene. I used the options of feta cheese, and chicken stock. I used a couple of small red sweet peppers instead of the red bell. Very good work night supper.

While this was very good I don't think I would make again since I like other roasted sweet potato recipes a bit better. I made a half recipe for my lunch but didn't quiet eat it all.

Toasted Brioche with Boozy Mushrooms : page 62

This one was a hit at our house. Hubby, son and I all agreed - delicious. I make a recipe and a half to serve three. My store didn't have dried mushrooms so I omitted and used two 8 oz packages of baby Bella. Instead of serving on Bricohe I used the authors suggestion and used using sourdough. I will be making this one again and maybe try with dried mushrooms when I can find them.

My daughter fell in love with this potato dish and the rest of us enjoyed it as well. I think I'll be making both of these recipes again and again. I couldn't find Creme Fraiche so I used sour cream instead.
