Black Bean & Roasted Poblano Quesadillas : page 246
Daughter and I loved these. I couldn't find smoked mozzarella so used regular and added a couple drops of liquid smoke. We ate ours with the optional avocado slices and lime wedges. Omitted the cliantro and added some salsa when we ate them. I made a half recipe for the two of us.

Son adored this burger without the grilled onions. Daughter and I loved it with the onions and son in law enjoyed it plain. I used my grill pan for this one but know these would be good on the outside grill as well. Instead of just a lb each of ground pork and chorizo I used just over a lb pkg of pork and 19 oz of chorizo.

Fresh Corn Cakes : page 270
While these could easily be an appetizer they are great as a light lunch. The author says great alone as a first course or served with a salad as or alone as a light summery meal. Son, daughter, hubby and I all agreed these were delicious. I used grape tomatoes since they seem to have the most flavor this time of year. I also used frozen corn. Can't wait to make these again at peak tomato and corn season.

Kimchi Pork Chops : page 86
I really loved the combination of Kale, green onions, Kimchi, Fish Sauce, Sake, Brown Sugar and Pork Chops. Hubby and son liked but not near as much as I did. I served it with some leftover cream cheese mashed potatoes.

Pasta Carbonara Torte with Tomatoes and Sage : page 194
While we enjoyed this one we enjoy a similar recipe a bit better. Three cheeses and tomatoes are a nice touch in this recipe as the addition of a bit of sage. I used bacon instead of pancetta as suggested in the book. Pot was a pain to clean though. I failed to get a picture of this dish.

Made a half recipe for daughter and I for supper one night. I had some Kamut that we've never tried before and decided to use that for the grain. This made for a very filling, beautiful and delicious supper.
