I learned to cook from many good southern cooks including my Mom, Dad, several Aunts and my Grandmothers. My children and husband also like to cook and try new foods and recipes. My son still lives with us but our daughter is married. She often visits to cook with me. We are adventuresome eaters willing to try new things.

Bourbon Roasted Pork Loin from Everyday Dorie: The Way I Cook

1984 Portobello Sandwich : page 167

Son and I really enjoyed these but hubby didn't care for them. The flavors of the goat cheese with the tomatoes and lemon juice on the cooked portobello mushrooms was delicious.

Chicken Cutlets with Prosciutto and Sage : page 97

Lots of flavors going on here with the prosciutto, sage and dressing that goes on after cutlets are cooked. Lemon, olive oil, garlic and some other goodies. Delicious and both son and I enjoyed.

Easy Beer Bread : page 325

I used Green Man Porter rich dark ale from Asheville, NC. This quick bread was easy to make. Delicious warm with butter. I toasted some for supper with butter which was also good.

While my family and I thought this very good they said they liked my homemade lasagna better. The mini meatballs are a bit time consuming but I loved her tip of spreading the meat out and up the sides of a large bowl then sprinkling other ingredients over to evenly distribute throughout while mixing. I couldn't find veal so just used all lean ground beef. I also subbed cottage cheese for ricotta since we like that better.

Lemon Cake : page 296

I really hate giving this a rating of any kind since I think I might have messed it up. It did have a nice lemony flavor. I tested with a toothpick at the suggested end baking time and it came out clean. After cooling the middle sank and the outer parts were a bit on the dry side. I did use plain Whole Milk Greek Yogurt instead of the whole milk plain called for. Not sure if that would have made a difference or not. May have to try again.

I've seen reviews of this dish complaining of too much lemon. I used a small lemon for the juice and zest and thought it was perfect. The little bit of bacon fat added gives the taste of bacon through out the dish. Of course there was also 12 slices cut into 2 in wide strips. She has you cook the bacon in half cup water till it evaporates then continue cooking till crispy. I was skeptical about this process but it resulted in perfectly crisp bacon. I'll be using that method again when I need bacon bits for a dish.

Pasta Salad with Basil Pesto : page 241

This was quiet easy. Make the Raw Basil Pesto p189 and cook pasta add the pesto to the hot pasta and sprinkle on Parmigiano-Reggiano cheese. I was the only one who would eat it in my house though so had quiet a bit leftover. Author says it's also good cold so maybe lunch for another day. Only problem I had with this recipe is it calls for 3/4 lb. of pasta and that left a 1/4 pound I need to find another use for. I did sub Campanelle pasta for the fusilli called for.

Warm Leeks "Nicoise" : page 174

Son and I really enjoyed all the flavors in this one - roasted tomatoes, boiled leeks, and a nice dressing of red wine vinegar, EVOO, black olives, capers, and basil leaves. I only made a half recipe. Still enough for three but hubby didn't like.

Warm Potato and Scallion Salad : page 147

My family and I love potato salad many ways but unfortunately we didn't care for this version. I did have to make a couple substitutions and maybe that affected the outcome to much. I couldn't find sherry vinegar and used red wine vinegar instead. I though I had canola oil and didn't so I used vegetable oil.

White Musrhooms and Spinach : page 162

Loved this but we love mushrooms and spinach. Hubby didn't care for it though. I would make again.
