Tonight as part of our supper I made Braised collards with Parmesan-tomato broth p. 35 from Virginia Willis Secrets of the Southern Table. I loved the broth in this one and could easily drink it. The collards were delicious too.

Cuban-style pork chops with mojo sauce : page 143
The pork chops were delicious. I had a pork loin I had cut into thicker sized chops and decided to use those instead of bone in chops. I browned in pan per authors instructions then instead of putting pan in oven I placed the chops on a baking sheet and continued with recipe. I doubled the recipe since there were 5 of us. The marinade gave a great flavor to the chops but none of us enjoyed the cooked down marinade as much on the chops after cooking. We decided a little of the cooked marinade went a long way.

Greek Cripsy Lemon-Herb Potatoes : page 58
This potatoes were indeed crispy and delicious too. I liked all the flavors -lemon, oregano, and a bit of cayenne. I'll be making them again.

I made a half recipe of this to have some to go on the Cajun Shrimp p 99. It will be good on others things as well when you want a lot of heat.

Nashville Hot Grilled Chicken : page 167
This was super spicy but oh so tasty. We've made fried Nashville Hot chicken but I think this grilled version might be even better and it's a little better for you to.

Another spicy dish from this book and oh so delicious. We loved these spicy shrimp served on a toasted baguette. I did make a half recipe since it was for hubby and I only. I had mine with a salad which helped cool my mouth.

Spicy Macaroni and Cheese : page 54
I didn't enjoy this one as much as I thought I would. I don't think I like my mac and cheese spicy.
