I learned to cook from many good southern cooks including my Mom, Dad, several Aunts and my Grandmothers. My children and husband also like to cook and try new foods and recipes. My son still lives with us but our daughter is married. She often visits to cook with me. We are adventuresome eaters willing to try new things.

When I first saw this post on Joy's blog about the cookies the amount for the chocolate was missing. Joy has now fixed it to add that amount. I was craving something sweet and different and I love salty and sweet so I knew I had to give these a try and boy am I glad I did. They are fantastic! Delicious with a capitol D. Both hubby and I enjoyed them.

I didn't have any dark chocolate on hand (which I love) but decided to use mini semi-sweet chocolate chips. I hope to make them again with the dark chocolate chunks but if they're any better than the ones I just made don't know if I'll be able to stand it.

I checked some other chocolate chip cookie recipes that also make about two dozen cookies, including Joy's Sweet Potato Chocolate chip ones from her book. which are also delicious and they called for a cup. So I measured out a cup of the mini ones and added in when I added the popcorn. after I had dumped in about 3/4 of a cup I decided to stir before adding more since it looked like a lot. I stopped at that.

I also wanted to use the suggestion on Joy's blog to use buttered microwave popcorn so I googled to see if this recipe was online anywhere to see if I could find an amount for 1/4 cup kernels after they are popped. I found that it seems to be about 4 to 4 1/2 cups so I used about 4 1/2 cups popped microwave popcorn.

These were good but not as good as I was expecting. Not sure what exactly I didn't enjoy about these but hubby said he thought they were a bit doughy even though they were completely done. They did have a nice flavor and I enjoyed the way they tasted with the brown gravy from my roast that I served with them. We didn't like them good enough to make them again though. Maybe a taste preference.

This is the perfect seasonal coffee cake recipe for Christmas or Thanksgiving. The recipe makes two but it's easily halved to make one as I did. It's filled with lovely smells and tastes to delight your senses.... orange juice and zest, cranberries, cinnamon, and pecans. I loved the tangy bits with the cranberries, the crunchiness from the nuts and the citrus zing from the OJ and zest. It's not overly sweet even with the confectionery sugar glaze. I love this one and it's great with a cup of coffee or hot tea.

Sweet Corn Hash

Joy suggests you serve this with scrambled eggs. I'm sure it would be good that way but I just served mine with some left over toasted cornbread for supper. It was easy and delicious. Roast up some potatoes in the oven with oil, salt and pepper. Caramelize some onions with butter in a cast iron skillet, add the roasted potatoes then some corn, a little more butter and some parsley. Delicious.

When I found this on Joy's site I knew I had to make it. I already had all the ingredients except for the tomatoes. I stopped at the local produce stand that grows their own tomatoes and picked up a few pints of their heirloom baby tomatoes. At the first of the season they were charging 1.50 per pint but now they are only a dollar a pint. I have been getting plenty of them. They have a couple kinds of yellow ones, chocolate cherry and several types of red. I got a mixture for this cobbler.

It was love at first bite for us on this one. The caramelized onions and tomatoes together with the basil and red pepper flakes give you a taste explosion in your mouth. I scooped up a little of the blue cheese biscuit with each bite and it was so good together. The recipe makes more biscuits than you need and I like that Joy tells you they can be frozen after cutting them out for a later use. So now I have six more of these beauties waiting for another taste explosion.
