About me: I collect cookbooks and love to cook and try new recipes. I tested recipes for Leite's Culinaria for almost eight years. I learned to cook from many good southern cooks including my Mom, Dad, several Aunts and my Grandmothers. My children and husband also like to cook and try new foods and recipes. My son still lives with us but our daughter is married. She often visits to cook with me. We are adventuresome eaters willing to try new things.

Bourbon Roasted Pork Loin from Everyday Dorie: The Way I Cook

This was delicious. I know she says in the book not to use the good bourbon but all I had was Woodford Reserve so that's what I used. I marinated for about 8 hours in fridge. Loved the apples and onions... read more >

I used ground pork instead of the Fauxrizo for this recipe as suggested by Damaris. Hubby, son and I loved these. Son did pick out the corn from his though. I was the only one who loved the jicama slaw on mine. Hubby said ok and son liked the jicama by itself. The seasonings for these tacos was fantastic.

My daughter watched Aarti make these on her show and then made some for us. They were delicious. My daughter didn't use the mint in them and used Sirrachi sauce instead of the peppers. The wraps were filled with flavor and great.

Bourbon Pecan Cake

My daughter and I watched Damaris Phillips make this cake on her show Southern at Heart. I knew I had to try it. It was so moist from the coconut oil and butter. Great tasting cake.

I had everything on hand to make this when I watched Amy make this on her show Heartland Table so I knew it was going to be on my supper table that night. It was delicious. I used some Penzy's Singapore Sling seasoning that said it had some curry in it. It was wonderful with the carrots.

Chai Tea

This was a bit better than the last homemade chai tea I made. It had more of a spicy taste that I enjoy.

Chesapeake Bay "Crabby" Mac

My daughter and I love crab and tried to eat it as many ways as possible while on our Outer Banks Vacation last week. She found this recipe and we decided we had to try it. We did take out some before stirring in the crab for my hubby and our son since they didn't want crab in mac and cheese. I kept out about 4 ounces of crab from our pound for the mac and cheese since we had removed some of the mac and cheese for the boys and so we could have Crab Eggs Bemedict for breakfast the next morning. This mac and cheese was fantastic.

Colcannon

I'm made this many times since I saw it made on Tyler Florence's show on the food network. My family and I love it. My sister requests I make it for her birthday every year. Her birthday is St. Patrick's day. I made it for her this year on the Sunday before our birthday.
Even my son who doesn't normally like cooked cabbage loves this one. He adds a bit of Irish cheese to his.

Coyote Quesadilla

My daughter and I watched the episode of Guy's Big Bite a couple weeks ago and decided we needed to try these. We made them for supper and they were fantastic. The black bean salsa and chipotle ranch dressing were wonderful with the quesadilla. The chicken with the blackening spice rub would be great just by itself but is wonderful with all the other ingredients. I'll definitely make this one again.

I had some leftover chipotle ranch dressing and my nephew and I ate some on our grilled burgers recently at a family cookout. He immediately fell in love with it and asked if I'd make him some for sandwiches. (Great idea, this stuff is addictive and so easy to make.)

Crispy Cornflake-Crusted Chicken Sliders

Daughter and I saw Guy Fieri and his son Hunter make these on a recipe Guy's Big Bite in an episode called Hunter Goes to College. This is one of Hunter's own recipes and it was very good. After seeing the show daughter requested this as part of her birthday supper for this year. I did only use 1/2 as much Siracha as called for in the buttermilk coating since son in law has an aversion to hot sauce and 1/4 cup to a cup buttermilk sounded like a bit much. I think the rest of us could have handled it but not him. These were great. The slaw on the sliders was also a recipe from Hunter.

My daughter made these for us after seeing Anne Thornton make them on her show Dessert First on the Food Network. They were so good. Sweet and satisfying and it only takes a small one to feed your sweet tooth. She they were a bit time consuming but so worth it.

Gina's Pimento Cheese Cakes

My daughter and I made these tonight to go with some chicken chili we had for super. We watched Gina make them on Down Home with the Neely's yesterday afternoon when I stopped by my daughter's house on the way home from work. They were delicious and went so well with the chili. I'd never thought of icing cornmeal cupcakes with pimento cheese but it's wonderful. We'll definitely be making these again.

Goat Cheese Smashed Potatoes

This was wonderful and went great with the Turkey Meatloaf with Fig Catsup from the same episode. They would also be great with other meals. My local market was out of white sweet potatoes so I used red. Since you use half the amount of sweet potatoes to white potatoes the finished produce was a lovely color.

Son and I enjoyed these little sandwiches. Hubby didn't like the Kings Hawaiian Rolls they were on. These sandwiches are similar to the Party Ham mini sandwiches I made for my family often. This version uses roast beef and Pepper Jack cheese and melted butter with some other ingredients to brush on top of the rolls before placing in the oven.

Massaged Kale Salad

This was absolutely amazing. We loved it. Who'd have thought massaging kale would make such a tasty salad with mango and pumpkin seeds. I know we'll be making this one again. The leftovers were even good the next day straight from the fridge.

Mexican Rice

While this was very good it tasted like it was missing something. I think it needed a bit more tomatoes and spice. I did omit the cheese and maybe that would have given it a bit more flavor but we wanted it without cheese.

New Potatoes with Feta

I got some really nice new white potatoes to make this recipe with and they were delicious. Loved the feta and green onions that are tossed with the finished potatoes. Also loved the fact she uses coconut oil for this recipe. I made this as part of our Easter 2014 family supper.

Pineapple Upside-Down Cake

Hubby loves pineapple upside down cake and always requests it for his birthday. This one was a bit different in that it uses both slices and crushed pineapple. Good but hubby thought needed a bit more sugar.

I made this awhile back on one of colder days and it was delicious. Loved the flavor the porter gave to it and the cheesy potatoes. I did opt to use some ground beef instead of the veggie crumbles.

Pulled Pork Egg Rolls

We made these interesting pork egg rolls like Guy Fieri made on his show and they were great. Think southern crosses with Asian.

Nice to put all of supper on a sheet pan and have supper ready soon. Pork chops, green beans and potatoes. Yum.

These were fantastic. What a great idea for use of some Thanksgiving leftovers. I know we'll make these again.

Sloppy Joe-Stuffed Peppers

Last nights supper was a result of watching Ayesha Curry last Sat on her new food network show. Hubby said he'd eat the sloppy joes she made in stuffed in bell peppers so I made them. I saved some of the Joe mixture for son and son-in-law to eat on buns since they aren't bell pepper fans. Guess what hubby had to have his on a bun two. Daughter and I loved them in the colored peppers. I used red, orange and yellow. Everyone loved the Joe mixture. The cheese and corn chips on top were a great addition.

Spaghetti and Meatball Calzones

My daughter made these for us. She first saw the spaghetti made on Sandra Lee's Money Saving Meals. She found the recipe on the Food Network Site. It was a round 2 web only recipe. She had made them several times for her and her husband. She did use ground turkey instead of beef since she doesn't eat red meat. I was delighted she made some for us since they are so good.

Daughter and I enjoyed this one, son not so much. He didn't like the corn it it. We all agreed it's the perfect cheese to noodle combination. Loved the addition of a little hot sauce. We were a bit skeptical about putting the cast iron skillet filled with the mac mixture on the top rack so we put it on the middle rack. The bottom got a bit browned so maybe that was why. Those browned bits were still delicious.

Taco quesadillas

Saw the Pioneer woman make these on her show recently and they looked amazing. I made them for my family and we all loved them. Will be making again. It' essentially a cheese quesadilla with taco meat and toppings on it.

These mini burgers are wonderful and the ketchup is great too. Rachael Ray sure made a hit with these. We've made them with both ground beef and ground turkey and they were equally delicious. Love the chipotle in this. I'm hooked on fired roasted tomatoes because of this ketchup.

I made this for our Christmas breakfast 2010 and it was fantastic. We all loved it. I did put some of the salad in my son in laws apple before I added the mayo and sour cream to the rest since he doesn't like either. He enjoyed his as well. It's a lovely way to serve a fruit salad and I'll be making these again. The melon baller worked wonderful to scoop out the apple flesh. Also the tip to drop the hollowed out apples and their tops in a big bowl with water and lemon juice kept the apples from turning brown. I quickly chopped the flesh of each scooped out apple as I went and added to the pineapple and other salad ingredients and the pineapple helped that part of the apple from turning brown also.

Triple Pork Sliders

My daughter, son-in-law and I all liked these but hubby wouldn't even taste of them and son didn't like. My daughter and I watched Pat and Gina Neely make these on their show yesterday and decided we needed to try them. I couldn't find Mexican chorizo so I used some Italian sausage I already had on hand and added a bit of paprika. The triple pork is ground pork, chorizo and bacon.

My daughter and I watched Southern at Heart yesterday and since I was going to the grocery store after, we decided to make this for our supper. This was great and such fun making the fig catsup with my daughter. We also made the Goat Cheese Mashed Potatoes from the same episode and they tasted wonderful with the meatloaf and fig catsup. I would have made the miso greens as well but couldn't find miso.
